Shipton Mill’s New Organic T80 Heritage Wheat Flour

The T80 Resilience Blend Sourdough recipe is online now.

Made with Shipton Mill’s new organic T80 heritage wheat flour to Chris’s recipe, which you can find on their Journal. It’s a fragrant light brown, all-purpose flour, which they mill from a mix of different species and varieties of “chaos” heritage wheats. By growing a blend of wheats, this offers an insurance policy against changing climate conditions and evolving plant diseases.

@shiptonmill mill their Resilience blend from a variety of populations, including Miller’s Choice and Torth y Tir, all farmed organically by a group of UK farmers (currently including Ampney Brook, Abbey Home Farm, Lower Dean Farm and Linley Estate).

All the growers work to improve soil health and to support the environment through organic farming practices. Organic farming also prohibits the use of Glyphosate, which is one of the many reasons they love organic.
